The Effect of Different Processing Methods on Fishmeal Element Quality: Evaporator System

چکیده
Anchovy (Engraulis encrasicolus L., 1758) is the main source of fishmeal in Turkey. The research was carried out 3 factories where anchovy processed Black Sea during 2007-2008 fishing season. Factories A and B have an evaporator system, while factory C does not system. In study, it aimed to reveal effect system on mineral substance quality produced oil factories. As a result this elements are listed descending order as Ca>P>K>Na>Mg>Fe>Zn>Mn>Cu. According results research, determined that phosphorus, sodium, potassium, calcium zinc values fish using were higher than without difference between statistically significant (P<0.05).
